Dear Reader, My name is Ana Sofia and I am a professional dancer in NYC. When I first moved to NYC at 18 I found myself always scrambling to find affordable, filling and nutritious snacks while also adapting to the demands of attending a full time classical ballet program! This is my personal recipe that I have developed over the past 10 years! I hope you enjoy 🙂
Base Ingredients
- 3 cups quick oats
- 1 cup creamy peanut butter
- 1/2 cup mini chocolate chips
- 1/2 cup honey
Optional ingredients to add– feel free to add one or more of the following
- 1/3 cup Ground Flaxseed
- 1/3 cup Chopped almonds
- 1/3 cup Chia seeds
- 1/3 cup Pumpkins seeds
Instructions
- 1) Combine all ingredients into a mixing bowl and stir together until well combined. The mixture is thick so it will take a few minutes to fully mix it all together. If you have added in extra ingredients you may want to add more peanut butter and honey to help keep the mixture together. Use your judgement – it should feel like cookie dough!
- 2) Roll into balls. I use a small ice cream scoop to get even sized energy balls, which holds about 1 tablespoon of the energy ball dough. ***If the energy ball dough is too sticky, which it will be naturally as there is honey in it, try refrigerating for about 20 minutes to see if that helps!
- 3) Eat right away or you can refrigerate for a couple of hours if you want to serve them cold. I think they’re best tasting when they are cold so I always make them before I need them (like for after school) so they have time to refrigerate for at least 2-3 hours.
Extra Tips:
- Store leftovers in the fridge, in a covered container, for several days (mine normally last 5-7 days! 🙂
- You can make this gluten free using GF oats and nut free using Sunflower butter
